My new favorite treat. Lots of beta-carotene.
Preheat oven to 450. Scrub 2 sweet potatoes but leave the skin on for maximum nutrients and flavor. Slice the potatoes into strips and place them on a sprayed baking sheet and cover with foil. Cook 30-40 minutes, turning once (I didn't turn them and they were fine). Remove the foil after 20 minutes to allow them to brown. So delicious and sweet and the kids love them. Ash's main concern about this diet was not feeling full, but with treats like these, he is full.

Ok, so I am loving your diet. I love hearing new healthy ideas, as I am getting weary of my old standards. I make oven fries like this all the time with russet potatoes, thanks for the sweet potato idea! I am on the last week of a "No sweets, deserts, or much sugar on anything" month long diet commitment. It's gone really well, but last night I dreamed all about chocolate chip cookies. Oh how I love chocolate chip cookies...

These sound so good but everytime I go to make sweet potato fries they end up too soft. Do these get all mushy?
