The Engine 2 Diet
Okay, so I'm trying a new diet, mainly because I don't want to buy bigger clothes or wear my fattest pants every day. That's how bad it has gotten, folks. It's basically a plant-based vegan diet, but I'm going more vegetarian than vegan. I'm cutting out meat, milk and poultry but not cheese or eggs, we'll just go more sparingly on those (Sarah will keep having whole cow's milk, of course). And my toast still needs butter. But I just made my first shopping trip last night, and today we had:
Breakfast: Cheerios (I'm using up the last of the cow's milk in my fridge). Normally I like to steam oatmeal and have it with blueberries, walnuts, and ground flaxseed meal, but this morning was busy. Micah thinks my favorite food is oatmeal. Unfortunately, no. But oatmeal is so much better steamed. Bring 2 cups water to a rolling boil, remove from heat, put in 1 cup old-fashioned oats and replace lid. It steams in about 10 minutes and the texture is soooo much better than microwaved instant oats. Maybe everyone already knows this.
Lunch: hummus, tomato, and cucumber wraps in whole wheat tortillas. I was prepared for a big fight, but the kids actually liked them, once they tasted them.
Dinner: whole wheat pizza with spinach, red peppers, garlic, and a tiny bit of mozzarella.
We'll see how this goes--I really like the book so far and the dinner recipes look delicious if a little time-consuming. I think once I get in the habit of cooking this way, it will be faster. I'll probably continue to post recipes if anyone wants them. Wish me luck!

Seriously, I wish I were you sometimes. You run, and now you eat healthy. You are just awesome. Good luck with the diet (or nutritional eating...the word diet to me is just like saying "something I'm bound to quit in a week"). Keep up the good work. That's great your kids didn't complain about lunch.
Have you tried steel-cut oats? They take longer to cook than rolled oats, but I love the texture. I haven't tried steamed oatmeal, but it sounds good.
I admire you for your healthy eating. I've been half-heartedly trying to lose 5 lbs but my will power is lacking.

I swear the only way to do a diet as a mommy is to put the whole family on a diet. That way you are not making two different meals three times a day. Is this diet something you are doing forever or just for an allotted amount of time? Good luck with it! Can't wait to hear how it works out for you!
