Tonight for dinner we just had easy veggie nachos. Most of these ingredients are usually in the kitchen anyway, so that's the recipe I chose at the last second.
bag of corn chips (I used Costco tortilla strips, the book recommends buying corn tortillas, cutting them into squares and toasting them yourself. Yeah right.)
2 cups chopped romaine lettuce
2 cans black beans, rinsed and drained (for your protein)
diced cilantro, to taste ( I luvvvv cilantro)
2 large tomatoes, diced
1 bell pepper (I used 2, one red, one green)
4 green onions, sliced into rounds
guacamole
salsa
Toss all except the guac and salsa. Add toppings and enjoy. No one even asked me where the cheese was. :)

That sounds delicious. Although, the only thing I have in my house right now in that recipe is the salsa. Looks like I need to carry more things in my house. :-)
