This is one of my favorite winter crock pot soups-- I use it as a main course with focaccia or some other yummy bread. So healthy, so easy, so cheap.
6 TB butter
1 yellow onion, chopped
1/2 tsp curry powder
1 1/2 lbs. chopped zucchini (I used too little last time and it was way too buttery)
3 TB rice, basmati or white, uncooked
1 TB basil
3 c. chicken or vegetable broth
1 c. 1/2 & 1/2
salt & pepper
croutons (optional topping)
Put butter, onion, curry powder, and zucchini in crock pot, cover and cook on HIGH for 30 minutes. Add rice, basil, and broth, cook on LOW 5-6 hrs. Puree or blend, add s & p to taste, add 1/2 & 1/2, LOW for 30 minutes. Enjoy.
